*This is my version of Beef Enchiladas.
Most ingredients used are Great Value Brand to be Budget Friendly.
I have included the cost for these items
so you know exactly how much I spent on this meal,
if you are like me and are trying to budget your meals.
I have been making this dish for about 10 years.
It is easily, our family's favorite.
This is my #1 requested recipe and by far my most popular to date.
I hope you enjoy it as much as we do.
INGREDIENTS
1lb Ground Beef (73% Lean/ 27% Fat) $4.34
1 Pack Large Tortillas (Old El Paso Grande) $3.24
1 Can Refried Beans (Great Value) $0.92
1 Can Red Enchilada Sauce 10oz. (El Paso) $1.98
(Split Enchilada Sauce in 1/2)
1 Can Mild Tomatoes w/Green Chiles (Great Value) $0.72
1 Packet Taco Seasoning (Great Value) $0.48
2 Cups Fiesta Cheese (Great Value) $3.98
1 8oz Tub Sour Cream (Great Value) $1.16
2/3 Cup Water
TOTAL COST $ 16.82
🌶 MILD 🌶
This dish is Mild.
You can buy ingredients to make it spicier,
if that is your preference.
This Meal is has been approved by my Kids. 😀
*Preheat Oven 350 Degrees Fahrenheit*
STEP 1)
ENCHILADA FILLING
Brown Ground Beef All The Way Through,
Drain Off Fat,
Return to Pan
Add 1 Packet of Taco Season and 2/3 Cup Water
to Ground Beef in Pan.
Stir Ingredients Together and Bring to a Boil.
Reduce Heat and Let Simmer for 3 to 4 Minutes.
Add In 1 Can of Refried Beans,
1 Undrained Can of
Mild Tomatoes with Green Chiles,
and 1/2 Can of Red Enchilada Sauce
to Ground Beef Taco Season Mixture.
Stir together to Combine All Together.
Let Simmer on Low for about 5 Minutes
until Refried Beans are Well Combined.
STEP 2)
BUILD BURRITO
TIP: To Make Tortillas Easy To Fold,
I Place Them in the Microwave
for 20 Seconds
Take One Large Scoop of Enchilada Mixture
(I used a Basting Spoon)
Make Sure to only Use About Half of the Enchilada Mixture
to fill Tortillas.
You will need the other half to top off filled Enchiladas.
Place Scoop of Enchilada Mixture
into Middle of Tortilla
Add Desired Amount of Fiesta Shredded Cheese
on Top of Mixture in Tortilla
STEP 3)
FOLDING TORTILLA
(This is my process, you may do something different)
Fold On Bottom of Tortilla
Fold Left Side of Tortilla Over the Bottom Fold
Fold Top of Tortilla over Left Side Fold
Take Right Side of Tortilla and
Fold Over to Wrap Under Left Side
Start Stacking Wrapped Tortillas
Side By Side In Casserole Dish
Do This with all Tortillas until Casserole Dish is Filled
Once Tortillas are Wrapped and Stacked
in Casserole Dish,
Use the remaining Enchilada Filling and
Pour on Top of Stacked Tortillas.
Take the remaining half of Enchilada Sauce and
Drizzle Over Wrapped Tortillas and Enchilada Mixture
Take the remaining Shredded Fiesta Cheese (About a Cup)
and Sprinkle on Top of Drizzled Enchilada Sauce
Take Aluminum Foil and
Cover Lightly Over Casserole Dish
(Try to make a tent so the foil
is not touching the cheese)
Place in Oven for 30 Minutes at 350 Degrees Fahrenheit
Top with Sour Cream or Desired Toppings
*Makes 6 Enchiladas
This Dish can easily be doubled
for large families or parties.
